Founded in 1988 by Paymon Raouf, the restaurant began as a small café offering Middle Eastern specialties and rich Arabic coffee. What started in just 900 square feet has grown into two full-service restaurants with two lounges, each known for outstanding food, entertainment, and hospitality. In 2000, Paymon partnered with Jeff Ecker, President of Restaurant Consultants of Las Vegas, ensuring steady growth and consistent excellence.

Over the years, Paymon’s has earned a reputation as Las Vegas’ most award-winning restaurant, with more than 30 Best of Las Vegas honors and recognition from Zagat and other national publications. Their approach is simple yet unique: a dedication to freshness, health, and flavor. Long before it became popular, Paymon’s embraced vegetarian, vegan, and gluten-free offerings, alongside a wide array of Mediterranean, Middle Eastern, Turkish, Greek, Italian, Indian, and American dishes. House favorites like the famous Athens Fries sit comfortably next to traditional mezze platters, kabobs, and international entrées.
